Substitution Tips

Substitutions work best when you understand WHY the ingredient is in the recipe. Eggs provide structure, moisture, and leavening — so an egg substitute needs to cover at least one of those functions. Butter adds fat, moisture, and flavor — oil replaces the fat but changes the texture. Sugar is not just sweetness — it adds moisture, browning, and affects texture. The best substitutions match the function, not just the ingredient.
